Homemade Xylitol Lollipops Recipe

Equipment

  • 1 Silicone lollipop mold
  • 1 Burner and saucepan
  • 1 Measuring jug and spatula

Ingredients
  

  • 1/2 cup powdered xylitol
  • 1/2 tsp flavoring essence or extract of choice
  • 4 drops food colouring to match

Instructions
 

  • Add xylitol powder in pot and ensure to remove as many lumps as possible
  • Set cooktop to low heat and let the xylitol powder melt, it will turn translucent then transparent. I like to mix with a spatula so the xylitol melts evenly and also to reduce clumping.
  • The xylitol should melt to a water like consistency when ready. If using a thermometer, it should show around 140°C (degrees Celsius) or 284°F (degrees Fahrenheit).
  • Take it off the heat and let it cool slightly. Now add your essence/flavour and food colouring and mix until well combined.
  • With your silicone mold ready, swiftly add the mixture to each cavity, making sure to cover the sticks fully. It should fill about 7 lollipop cavities.
  • Leave the lollipops to dry for 24 hours approx. The oven is a great place to leave them. If they haven't fully hardened by this time, then leave to dry for a little longer.

Notes

  • Be careful when the xylitol heats up as splashes can burn skin. 
  • I like to use a plastic wrap over the lollipops for aesthetics and to keep moisture away. Watch the video to see how I do it.
  • Although this recipe only uses 4 drops of food colouring, the lollipops will dry with a subtle tint in the color you choose. You can add a few more drops to intensify the shade, but be cautious—adding too much may compromise the structural integrity of the xylitol binding.
